With DeleTrack, a new modification available in Cydia, you can delete the songs from your iPod application (from your music app as of iOS 5) directly from your iPhone, no need to use iTunes or a computer.
This mod comes by default in iOS 5, so it is only for iOS 4.
To use it, you have to press the "+" button, select "delete Songs" and slide your finger over the song you want to delete.
