      You are not clear about how the double factor works. If someone steals your phone, it's as simple as putting it in lost mode and voila. No one will be able to access the code they send you because it will be locked, even if you don't put it in lost mode, they will need the unlock code to be able to access the code they send you.

      Regarding the trusted device, you have a trusted phone. As soon as you cancel the SIM of the stolen iPhone (something you must do immediately) and request a new SIM, you will be able to enter any device again. And all that in case you only have one trusted device (iPhone), because if you have more (Mac or iPad) you won't need even that.
